Biographical Note

Fannie Beal was born on July 31, 1883 in Lenawee County, Michigan. She graduated from Michigan Agricultural College (now Michigan State University) in 1908 with a B.S. from the Home Economics. She later earned a master's degree from Columbia University in 1923. Beal then became the assistant Dean of Women at Michigan State Normal College, now called Eastern Michigan University. She died in October 1976.

Scope and Contents note

The papers of Fannie Beal contain two notebooks from her classes at Michigan Agricultural College: a cooking notebook and a sewing notebook. The first volume contains notes from her senior cooking class about assorted recipes for fruit dishes, juice, rolls, and desserts. Also within this notebook are lecture notes pertaining to canning, the chemical make-up of humans, and the basics of proteins, sugars, and starches. Students in the class were also taught basic biology, shopping for food, serving meals, and preparing a table.

The second volume contains different cloth samples which show sewing styles and techniques. Most of these samples have notes about the sample material, its dimensions, and the needle gauge used. Some examples shown in the notebook include patches, pockets, button holes, eyelets, and darning. This volume was disbound for preservation.
